Charme des Demoiselles

Rouge

A true pleasure red wine to enjoy slightly chilled in the summertime.

› In the vineyard

The vineyard, located in Côtes de Provence, extends over plains and hillsides. We favor environmentally friendly practices such as plowing of the soil and keep-up of grassy areas adjacent to the rows of grapevines. These practices aim at maintaining the flora and fauna, thus ensuring a healthy terroir.

› Vinification

The alcoholic fermentation is preceded by a cold maceration over several days to enhance the fruity aromas of the harvested grapes. The vinification temperatures are rigorously monitored and kept between 25 and 28 ° C.

A short maceration time coupled with very light reassembly result in a fruity and supple pleasure wine. Once the alcoholic fermentation is complete, the malolactic fermentation begins.

These are all necessary steps to ensure the production of a top quality AOP Côtes de Provence red wine.

› Vinification

These white wines are at the core of our production.

The berries are gently crushed with pneumatic presses to avoid the extraction of tannin.
The must is then racked in order to obtain a clear juice prior to alcoholic fermentation.
Temperatures are monitored and kept at 18 ° C throughout the fermentation stage, which lasts several days (10 to 14 days).

Afterwards the white wines are chilled in order to stop malolactic fermentation, and before being matured on stirred lees.
